WFMW - Veggie Dishes

Wow, I feel like it has been forever since I did a WFMW. I don't know if that is because I am lazy or only had three good ideas to my name and now I'm out. But this week is a backwards day so I get to ask y'all a question. I have been married almost a year now and am doing okay with recipes. I have learned what Craig likes and doesn't, or at least I think I have. And I have enough dishes that we can eat something different everyday for at least two weeks so I'm good on main dish recipes. My problem is side dishes, especially veggie dishes. When it comes to a holiday or a big Sunday dinner type situation I can handle it but not everyday occasions. I'll make a casserole or spaghetti but then I can't think of what to fix with it. Right now I'm just heating up frozen veggies but that gets old real fast. So I need some cheap and easy veggie recipes. Oh, and if they are kinda healthy that might be nice. But I do love butter so that part isn't totally necessary. Thanks!   1. Corn Casserole

    1 box Jiffy corn muffin mix
    1 stick butter
    1 can cream style corn
    1 can whole kernel corn (DRAINED)
    salt and pepper for taste

    Melt butter in microwave safe bowl or baking dish. Stir in corn muffin mix. Add both cans of corn and salt and pepper. Stir well. Cook on 350 for approximately 40-45 minutes until center is firm.

  2. one I love is when you have boiled you carrots before serving grate some root ginger over them and a couple of spoons of orange marmalade then stick them in the oven for a minute or two.

    really makes the carrots taste special.

  3. My husband and I just started eating beets and decided we really like them. I use canned beats and heat them in the microwave for 2 minutes. Then I drain off all the liquid and pour about 1/4 cup of vinegar into the pan and shake it. That's all there is to it.

  4. This is the best way to eat squash, zucchini, and brussels sprouts:
    Chop into pieces and cook up some bacon (just a little, treat it like a condiment!). Cook until soft. Add in some diced onion. Cook until onion is soft and starts to get translucent. Add in the veggies and water (if needed). Let it steam until they are tender.

    Carrots: Cut into coins, put in a small pot. Add an inch or so of water at the bottom. Cook with the lid off adding more water so they'll steam (but not so much that you are boiling them.) When they start to get tender, put in a small spoon of butter. When that melts add a spoon of brown sugar or squirt of maple syrup. Boom! Glazed carrots.

    You can also sprinkle broccoli or mixed veggies with a little sesame oil and soy sauce for an asian feel.

    Raw spinach is AWESOME sauteed in olive oil with garlic.

    I didn't put amounts because I'm sure you can figure out how much onion, etc. you guys like and will eat - every family is different.

  5. Saute sliced (in rings) zucchini and/or squash and some sliced onion (not rings, smaller slices) in olive oil. Once done, put whole thing into a casserole dish, sprinkle parmesan cheese on top and broil for 5 minutes.

    OH, also, oven fries! Slice potatoes or turnips into wedges, put on baking sheet, spray with olive oil or Pam, sprinkle salt, pepper and seasoning to taste. Bake on 400 or broil till done.

    That should keep you busy for awhile. :)

    If you are looking for something easier, we use frozen peas as our basic stand-by.

    I have to ask, what do you think of Ron Paul?

  8. OK, here's mine:
    Frozen corn
    Cook the frozen corn
    Put a couple of spoonfuls (more or less, to taste) of cream cheese in it.
    Voila!
    (Hint: cream cheese corn is as awesome as it is easy. Therefore, super awesome.)

  9. An easy and fast recipe is Cauliflower Polanaise. Basically, you just need cauliflower (duh), bread crumbs or crushed crackers, butter and a cooked egg. A hardboiled egg is best but you can scramble one up, too.
    Cook the cauliflower the way you like. Melt the butter in a skillet. Add the bread crumbs and toast in the butter. Chop up the egg. Toss the buttery crumbs and egg with the cauliflower. Yum!
    Here is another one that is good in the hotter weather:
    Kansas Cucumber Salad

    1/2 C mayo
    1/4 C sugar
    4 teaspoons vinegar
    1/2 teaspoon dill weed (or chop up some fresh dill)
    sliced green onions (I just use onion powder)
    4 medium cucumbers, peeled and sliced.

    Mix the first five ingredients. Add the cucumbers. Cover and chill for an hour. Enjoy!
